Grilled Pizza with Vegetables and Gorgonzola

I love pizza more than anything....especially if it is grilled outdoors!!

Grilled Pizza with Vegetables and Gorgonzola

Dough:
1 package active dry yeast
1 cup warm water
3 cups flour
1 1/2 tbsp. salt
1 1/2 tbsp. extra virgin olive oil


Toppings:
3 tbsp. olive oil
1 onion, sliced thin
5 baby bella mushrooms, sliced
1 red pepper, quartered and sliced
10 broccoli florets
10 tomatoes, quartered
4 garlic cloves, minced
2 cups mozzarella
1/2 cup crumbled gorgonzola
1/4 cup basil, sliced chiffonade

Heat oven to 500 degrees
Heat outdoor grill between 500-800 degrees


To make dough:
In a small bowl, combine yeast with water.  Let sit for 10 minutes.  In a food processor add flour, salt, olive oil, and water mixture and process until the dough forms a ball.  The dough should be soft (not sticky), add additional flour if dough feels sticky.  Transfer dough to a floured surface and knead dough for 2 minutes.  Dough should be smooth and elastic.  Transfer dough to a lightly oiled large bowl and coat dough with oil in the bowl.  Cover with a warm, damp towel and let rise in a warm place for about 1 1/2 hours until dough is doubled in size.  


To make pizza sauce:
Coat a large baking sheet with non stick cooking spray or olive oil.  Add tomatoes and garlic and drizzle with 1 1/2 tbps. olive oil.  Bake at 500 on the bottom rack of your oven for 7-12 minutes until lightly browned and a bit mushy.  


Toppings:
In a large skillet, heat 1 1/2 tbsp olive oil over high heat.  Add onion, mushrooms, red pepper, and broccoli to skillet and saute until lightly browned and still crisp.

To assemble and cook pizza:
Divide pizza dough into 2 portions.  Stretch pizza dough over a large oiled baking sheet.  Oil grates of the outdoor grill - add olive oil on a paper towel and rub on grates.  Place pizza dough on grill and cook for 3 minutes until crisp on the bottom.  Remove and place on baking sheet.  Spread roasted tomatoes on grilled dough.  Sprinkle mozzarella over the roasted tomatoes.  Now, add the vegetables and top with gorgonzola cheese and fresh basil.  Grill on baking sheet for 7-10 minutes until cheese is melted and dough is crispy.  Serve and ENJOY!!!!
